Dried bamboo fungus using a bamboo fungus dryer. Bamboo fungus grows in the autumn in moist bamboo woodland, with bright colours and skirts, divided into long-skirted and short-skirted bamboo fungus. It is mainly found in Fujian, Jiangxi, Yunnan, Sichuan, Guizhou, Hubei, Anhui, Jiangsu, Zhejiang, Guangxi and Hainan in China, among which Sanming, Fujian, Jiangle County, Nanping and Zhaotong in Yunnan, Weaving Jin in Guizhou and Changning County in Sichuan are the most famous. This article briefly shares the experience of using a bamboo fungus dryer to bake dried bamboo fungus products.

Bamboo fungus processing process steps.
1、Bamboo fungus pretreatment. Bamboo fungus is divided into long-skirted bamboo fungus, short-skirted bamboo fungus and yellow-skirted bamboo fungus, spiny-supported bamboo fungus, red-supported bamboo fungus, light yellow bamboo fungus and other categories. To ensure the grade quality of bamboo fungus, harvesting should be done at the right time. The bamboo fungus grown using the mycorrhizal ecological cultivation technique has a thick and tall stalk and a bright and crisp skirt. Before baking, arrange the bamboo fungus neatly on a baking mat and use a knife to gently cut away the white skin at the base of the stalk.



Bamboo fungus is placed in layers. Place the bamboo fungus in the material and arrange it in layers, taking care not to stack them as this may affect the drying quality of the fungus. The pods of bamboo fungus will continue to open after harvesting, even after resting. Pay attention to the cleanliness of the sorting site, it is difficult to wash the clean white mushroom leaves well after they have been stained with mud and dust.



Check the status of the equipment, if everything is normal, click on the user setting parameters item in the main interface, set the target humidity, target temperature, moisture removal mode, drying time, time to open and close the moisture removal and other parameters for each time zone. The overall design principle of the equipment parameters is to bake according to the principle of low temperature - high temperature - low temperature.

The specific parameters of the bamboo fungus dryer are set as follows: according to our experience, the drying of bamboo fungus is better with low temperature baking, first bake at 40℃, later the temperature can slowly rise to 50℃, after about 4 hours, the temperature will drop to 40℃ and continue to bake for about 3 hours. Observe whether the moisture discharge during the drying process is normal, the first 5-6 hours is normal with constant condensation discharge as shown in the diagram.
Grade and pack the dried bamboo fungus. After drying, take out and cool for 20-30 minutes, after the fungus becomes soft, then grade and pack. The drying rate of fresh bamboo fungus is generally 26-28%. The water content of the dried bamboo fungus will not exceed 13%. After drying, the bamboo fungus is creamy white, with no odour or impurities, and can be stored for about one year. The bamboo fungus dryer can also be used for the drying of mushrooms such as monkey head mushroom, Agaricus blazei, golden needle mushroom, crab mushroom, apricot mushroom, white jade mushroom, shiitake mushroom, slipper mushroom, portobello mushroom, white mushroom, agaricus blazei, flower mushroom, straw mushroom, chicken leg mushroom, wood ear, silver fungus, pine mushroom, red mushroom, flat mushroom and porcini mushroom.



Preservation of dried bamboo mushrooms. There are generally 2 storage methods, namely natural indoor storage and cold storage. Natural indoor storage is to store bamboo fungus in a light-free, dry, cool and low-temperature place, but it does not last long. Cold storage is to keep bamboo fungus in cold storage at 2~4℃, which can be stored for a longer period of time.
