Vermicelli drying
vermicelli as people's traditional food category has a long history, traditional vermicelli is used leakage scoop or extruded hanging rod production, natural drying, easy to be contaminated with dust and bacteria in the air, vermicelli color is dull, taste is not refreshing, hygiene requirements can not be guaranteed, production efficiency is low.
1. Fan traditional craft production process

: Raw material treatment→ crushing→ filtration→ drying→ beating paste→ leaking wire→ cooling → drying → finished products.
2. Production method
(1) Select potatoes. Choose sweet potatoes with smooth surfaces, no diseases and pests, no green heads, and good size.
(2) Clearance. Put the selected sweet potatoes in baskets and put them in the water. Wash away dirt, impurities. Peel off both ends and surface root whiskers.
(3) Crushing. The selected sweet potatoes should be chopped with a grinder in time and then ground into a slurry. When beating, water should be added while grinding, the finer the mill, the better, so that the starch granules in the cells can be ground out as much as possible to improve the powder yield.
(4) Filtration. The aim is to achieve the separation of residue and starch. Generally, 2-5 feet of hanging pulp cloth is used as a filter bag for filtration, and the filtration is carried out twice. The first time the slurry is thinner, and the second time is thicker. The filtrate is then sent to a sedimentation tank. After standing in the pool for two days, release the supernatant in the pool. Add 1/3 of the original water to stir and filter again. This time the filtrate enters a small pool and settles in place.
(5) Exposure to starch. When the water in the pool is no longer turbid, that is, after all clarification, drain the supernatant. Remove the oil powder on the surface of the starch precipitation layer, take out the lower starch and hang it into powder (that is, powder mass), and move it to the drying field for exposure. When half of the water in the powder evaporates, the powder is cut into several parts and exposed to the sun. The sunbathing field is located in a place with leeward winds and suns to prevent dust pollution.
(6) Beat the paste. This process is the key to determining the quality of fans. Add 25 grams of alum per 500 grams of starch, stir 2.5-3 kg of cold water, and then put it in a large pot to boil, and stir continuously, and the maturity is 8-9 percent (the formation of gelatinized starch). The beaten paste can be stirred into a moderate soft dough against other starches.
(7) Leakage and cooling. Prepare two pots, two cold water tanks and a medium-sized 48-hole colander before leaking wire. Since sweet potato vermicelli are thicker, the colander holes are slightly larger than those of other vermicelli colanders. When leaking wire, the paste should be fully stirred evenly, and warm water should be added while stirring, and the water temperature should be about 50 °C. Grab a ball of powder in your hand and let it naturally extend and hang down, if it does not break, it means that it is thin and moderate, and it can begin to leak. Prepare a pot of boiling water, constantly replenish it into the leaky pot When the water in the leaky pot is close to boiling (97-98 °C), carry out the leaking wire, let the powder ball flow through the hole of the colander, gradually lengthen and thin, and become a fan. After the bottom of the vermicelli sinks into gelatinization, when it surfaces, it is immediately fished out, put into a cold water tank to cool down, sorted into bundles by hand, worn on a wooden frame, and then cooled by another cold water tank, and constantly swinging until the vermicelli is loose into strips, and then placed indoors, and taken out to dry the silk outdoors after it is cooled.
(8) Drying silk. Take the fans to the leeward venue and hang them for drying. After drying, it can be sorted and packaged into a finished product.
Second, modern fan production
Modern vermicelli production has been produced by streamlining industrial production lines, which improves production efficiency, and ensures hygienic conditions and quality taste. Its production process includes: material selection→ and pulp → milling→ aging→ freezing → loose silk→ powder grasping, measurement→ drying → finished vermicelli. Among them, the drying link often uses natural gas boilers, oil boilers or electric heating for heating and drying.
