The traditional method of drying is to choose a sunny day and use the sun to dry the squid. 1、Water content and other characteristics.

2、Mastering the temperature:

Drying is generally required to be carried out at a relatively low temperature, with a temperature setting of about 35-45°C. To avoid the drying temperature is too high, its protein denaturation, bacteria breeding fast, destroy the quality of drying. At the same time to avoid rapid drying, resulting in squid surface crust, but not conducive to the inside of the moisture to the surface migration, the formation of false drying. 4、Mastery of humidity:

As squid cuttlefish is not only large moisture, and moisture exists in fat and grease, dehydration will be more difficult than other categories of materials, and control of its dehydration speed and moisture discharge is one of the important factors in determining the quality of squid drying, dehydration speed and moisture discharge mastery is particularly important to maintain the colour of seafood after drying. Squid squid drying should avoid water vapour staying on the squid's body surface and poor moisture drainage, which can lead to bacterial growth.

 

 

5、Drying notes.
