Drying of wood ear/white ear
White ear is also called white wood ear, snow ear or white ear. It is an artificially cultivated edible fungus vegetable of Tremellaceae and Tremella genus. Its gelatinous fruiting body is edible. According to the ecological type, it can be divided into cockscomb type and chrysanthemum type; according to the morphology, it can be divided into coarse flower variety and fine flower variety.
Drying process of wood ear and white ear:
1) Preheat the drying room to 40-45℃, and send the trimmed and cleaned white ear into the drying room.
2) The initial temperature is 40℃. When the moisture content of the ear slices drops to about 30%, the temperature is gradually raised to 50-60℃. Bake for 6-10 hours. When the ear slices are almost dry (the base of the ear is not completely dry), the temperature is lowered to 30-40℃ until they are dried (the moisture content is 10%-13%).
3) If the harvest is on a sunny day, it can be dried in the sun before being baked. The combination of sun-drying and baking makes the Tremella fuciformis have a good color and a strong aroma. After processing, immediately grade and seal the package and store it in a low-temperature, dry and ventilated place. Check at any time to prevent moisture resurgence, mildew or insect infestation.
