Blueberry is a small berry with a bright blue color. The blue color is covered by a layer of white fruit powder. The flesh is delicate and the seeds are very small. It tastes sweet and sour, and has a pleasant aroma. It is a good fresh food. Blueberry is a fruit with a very high nutritional value. The antioxidant capacity of blueberry ranks first among fruits and vegetables. The water-soluble and insoluble dietary fiber is twice that of kiwi fruit and three times that of apple. At the same time, as a source of vitamin C and dietary fiber, blueberry contains many vitamins and minerals.

Dried blueberries also inherit the advantages of blueberries. Blueberries contain a large amount of physiologically active substances and are known as the "first antioxidant" among fruits and vegetables. Dried blueberries can be dried by air-energy heat pump dryers to remove excess water from fresh fruits and retain nutrients, allowing them to be preserved for a longer period of time. Compared with fresh fruits, there is almost no big difference in nutrition and taste.

【2】Blueberry Dried Fruit Production Process
1. Material selection: Select ripe fresh blueberries as raw materials. The maturity should be 8-9.
2. Cleaning: Pour the blueberries into a 3% sodium hydroxide solution to clean the wax on the surface, and then rinse with clean water.

3. Sugar soaking: Soak blueberries in 30% sugar solution, then use a vacuum percolator to soak the sugar for 30 minutes, and then soak in sugar for 12 hours. Drain the sugar solution and put it into a pot, add dry sugar and heat it to dissolve the dry sugar. When the sugar solution concentration reaches 40%-50%, pour the sugar solution into the fruit, soak it again for 24 hours, and then soak it in 60%-70% sugar solution for 24 hours until the sugar content of the pulp reaches 55%-60%.

4. Rinse: Rinse the sugar solution on the surface of blueberries, and then dry the surface moisture.

5. Drying and softening: The drying temperature of blueberries should not be set too high. The drying time for one cycle is about one day (24 hours to 26 hours). The moisture content of blueberries after drying and softening should be maintained at about 12%.
6. Grading and packaging: Pack the fruits in food bags according to the quality grade requirements and then put them into corresponding cartons.

【3】Blueberry drying reference process
Phase 1: Set the temperature to 60℃ when entering the drying room and bake for 2 hours;
Phase 2: After the first stage, set the temperature to 40℃ and bake for 2 hours;

Stage 3: Repeat the first and second steps of heating and cooling to bake. After baking for 8-10 hours, the water content of blueberries will drop to about 20%-25%, and then wait for the blueberries to cool and soften;
Stage 4: After softening, perform secondary drying, set the drying room temperature to 65℃, and bake for another 12 hours until the water content reaches about 12%.
