Kiwifruit processing steps:

(I) First, the kiwifruit preserve production process is divided into material selection → cleaning → alkali immersion → neutralization → rinsing → slicing → drying → finished product.

In the preparation stage, pay attention to selecting intact fruits, free of pests and damage as raw materials, and then clean them. In the production process, first use alkali soaking: soak with 20% sodium hydroxide solution at about 105℃ (slightly boiling) for 1 to 2 minutes. Then neutralize with 1% hydrochloric acid at room temperature for 30 seconds. Rinse in running water for 10 minutes and drain. In the drying process, first cut off the two ends of the kiwi fruit, trim the remaining peel, and then cut it into thin slices 4 to 6 mm thick. Evenly place the materials on the material cart, then adjust the drying temperature to 65-75℃ for about 20-24 hours. When the moisture content of the finished product reaches below 20%, take it out for cooling and packing.

(II) Kiwi fruit dryer has the above characteristics:
