The buds generally open after ten o'clock in the evening and are basically thanked in the early morning of the next day, commonly known as "night fairies", also known as "king flowers".

I. Pod picking and handling.

The buds need to be sorted immediately after being picked from the planting area. Before baking, due to the high water content of the flower stems, 4-6 pieces need to be cut flush from the stems towards the buds to facilitate the rapid dehydration and drying of the stems during the baking process and to keep the colour of the buds consistent.

II. Drying in the room.

Dragon fruit flowers are evenly placed when loaded on a plate, not overlapping, backlogged, to prevent the quality of dragon fruit products. After the plate is placed on the grill, sent into the drying room for baking, generally placed 10-12 layers, if placed too much, it is easy to make the upper, middle and lower layers of the material uneven heating temperature, the spacing of each layer is 15 cm.

Three, temperature and humidity control.

1, drying room temperature of 30 ℃, in 1 hour to the dry ball temperature to 50 ℃, maintain a constant temperature of 2 hours, the wet ball temperature to maintain at 50 ℃.
  2. Dry bulb temperature of 50°C is raised to 55°C within 1 hour and kept at a constant temperature for 4 hours. Wet bulb temperature is maintained at 44°C. Drainage outlet for appropriate moisture discharge.
  3. dry bulb temperature 55°C rising to 60°C within 1 hour, maintaining a constant temperature for 3 hours, wet bulb temperature maintained at 43°C, with appropriate draining of moisture from the drainage outlet.
4、Dry bulb temperature 60℃ rise to 65℃ within 3 hours, keep constant temperature for 3 hours, keep wet bulb temperature at 42℃, proper moisture discharge at the discharge port.
5、Dry bulb temperature 65℃ rise to 70℃ within 3 hours, in this process need a lot of moisture discharge, keep constant temperature for 3 hours, keep wet bulb temperature at 42℃.

IV. Quality inspection.

Baking to 25-30 hours, you can open the drying room to test whether the dragon fruit flowers are qualified. Test with a finger to press the flower stems feel hard that drying qualified. If they are soft to the touch, further drying is required. Qualified drying is characterised by the special flavour of the dragon fruit flowers, the integrity of the flowers, a moisture content of no more than 12% and a natural colour.
